Livestream #7: Spotlight ingredient: Tiger nuts

Join Joost, Matt and Jo as they shine a spotlight on one of Future Food System’s hero ingredients: tiger nuts - a food source that nourished early humans for more than 1.5 million years.

Learn about what tiger nuts are, their role in ancient indigenous diets, the ground-breaking work of Dr. Weston Price, and be the first to hear how Matt and Jo plan to use this humble nut to create some extraordinary food.

Future Food System is inspired by the work of Dr Weston Price, a Canadian dentist who founded the research institute for the National Dental Association (now known as the the American Dental Association), where he was chairman from 1918 till 1928. Tooth decay was rampant and at the same time the Geographical Society were publishing images of newly discovered healthy populations from all corners of the globe. He convinced the NDA to fund a research trip. The first trip was so successful that research expeditions followed over many years collecting valuable body of research and knowledge.

His respect for the collective wisdom accumulated over thousands of years is evident in his published papers, studies and ultimately this book. He published a summary of his findings in 1939. He was especially in awe of Australian Aboriginals who he believed achieved the best diet on earth. A complex and biodiverse diet that at the time was 12 times more nutrient dense than the average American diet.

This ancient culture with all its wisdom is our inspiration for Future Food System.
